Copper Table operates on the conviction that the Saskatchewan plains produce ingredients sophisticated enough to anchor a serious restaurant without importing prestige from elsewhere. Chef Darren Kolb has spent three years building supplier relationships across the region - from grain farmers near Moosomin to bison ranchers west of the Battlefords - and the menu reflects those relationships in specific, traceable ways. Every service, from a Tuesday breakfast to a Saturday dinner reservation, runs at the same standard: no off-peak coasting.

The menu rotates four times annually in alignment with Saskatchewan growing seasons, ensuring that dishes in February differ meaningfully from those in August.

Sourced from a single ranch 80 kilometres west of North Battleford, braised for 14 hours and plated with roasted celeriac purée and a Meadow Lake wild-berry reduction.
